Canopy grew out of Mandy's Spring Nursery — a family, plant and landscape business the Smiths have been building for more than 30 years. Coffee was never the whole story. Here's the rest of it.


01 — The Café

Coffee is the door, not the destination.

Espresso drinks built exactly how you like them, seasonal specials, house-baked pastries and quiche, and a customizable menu with a full range of syrups and milk options. It's the reason a lot of people walk in the door — it's just not the reason they stay.

02 — Plants & the Garden Center

Grown by the family who's been doing this for 30 years.

Houseplants, perennials, trees and shrubs — many grown at the family's Mandy's Spring Nursery in Granville before they ever reach Canopy's shelves. If you're choosing a plant here, you're choosing from decades of growing knowledge, not a wholesale truck.

03 — Home & Gifts

A shop that rewards a slow lap.

Home décor, kitchenware, candles, seasonal finds and pieces from local makers across Saratoga and Washington counties. The selection changes often enough that regulars find something new nearly every visit.

05 — Garden Design & Installation

The part most people don't know we do.

Canopy isn't only a place to browse — it's backed by three decades of landscaping and garden design experience from Mandy's Spring. Bring a casual idea about your yard and talk it through with the team: plant selection, design, delivery, and installation are all on the table.

06 — Markets & Events

Something's usually happening.

Seasonal markets, local vendor days, and community gatherings run throughout the year — the kind of events where you leave with a candle, a wreath, or a new favorite maker you didn't know about that morning. Ask what's on the calendar next time you're in.

07 — The Small Things

Kids, dogs, and a squirrel named Carl.

Bird feeders outside draw a steady audience throughout the day. The resident squirrels have mostly claimed the grounds — including Carl, our unofficial mascot and the namesake of a regular on the drink menu. Kids and dogs are always welcome.

A visitor who came in for studio plants called it one of her favorite places to grab coffee and browse.
